2018 -Nicole’s Winning Salsa

Nicole Moody began cooking in 2016. She felt clueless about how to start, so she found a recipe online to use as her base. Over the next two years she received ideas and suggestions from many fellow chiliheads including Jim Watson, former ICS champion in multiple categories. He taught her how important it is to stay consistent and to always use the best and freshest ingredients. The rest is history as her salsa evolved into the 2018 Salsa World Champion recipe!


10 Roma tomatoes
1 red bell pepper
1 yellow bell pepper
3 jalapeños, seeded
1-3 serrano peppers (with seeds), minced
1/2 sweet onion
1/4 cup cilantro, minced
1 TSP McCarthy cumin
1 TSP Original Louisiana Hot Sauce
1 TSP Lawry’s season salt
1/4 cup Hunt’s 100% natural tomato sauce
1 TBL Napa Valley Naturals organic golden balsamic vinegar
1 TSP C & H organic sugar
2 juiced limes


Using a Cutco® knife, chop tomatoes, peppers and onion into small cubes and place in a bowl.

Add cilantro.

Mix remaining ingredients with the peppers and tomatoes.

Adjust seasonings to taste.
