2006 -Eagle Squat Salsa

Ingredients

5 pounds heirloom or garden fresh tomatoes - diced
4 cloves of garlic - minced
2 bunches of green onions - chopped
1 medium red onion - diced
1 bunch of cilantro - chopped
2 jalapenos - diced
1 red pepper - diced
1 yellow pepper - diced
1 green pepper - diced
Juice of 2 limes
1 tablespoon kosher salt
1 teaspoon cumin

Instructions

Dice the tomatoes, red onion, jalapenos and peppers.

Mince the garlic cloves and chop the green onions and cilantro.

Mix all of the ingredients, adding the juice of the 2 limes and the cumin.

Adjust the salt to taste and serve.
